Can we use the vehicle template and replace the vehicles with quadruped animals (horse, cow, etc.) ??

You can, but it would be better if you make them characters instead of vehicles really.
Yeah, you can use that. You’ll need to set the walk speed depending on the animal and their animations, btw. And when you make your anim BP and everything you’ll be able to get something like this: Various stuff - 2 - Horse and Flail - YouTube
