Fade in Post Process Volume?
Is there a way to fade in a post process volume once a player enters a trigger volume?
I have tried using a matinee with visibility and trigger tracks but neither has seemed to work

You will need to add Float Property Track to your Post Process volume's group in Matinee. Then choose BlendWeight parameter like this:
Then add 2 keys - first with value 0, second with value 1 (as seen on previous screenshot). Also set your default BlendWeight in PP properties to 0.
Now connect your trigger to execute Play function for you Matinee (I've also added Reverse function to be able to get it to the default state)
Now my volume is faded in when I step into Trigger Volume:
