How to Cook Different Shader Model ?

So my VR project is baking out at the opengl5 shading model and I want to try and bake it in OpenGLES 2 or at least opengl4 shading model. I cant seem to figure out how to access the command line to allow this to happen. Any and all insight into the steps to getting a cooked package with the desired shading model for PC build would be much appreciated. Thanks!
