I’m on a mac and middle-clicking and dragging as described in the documentation here doesn’t move the widget, it just moves the entire object in all dimensions.

Are you checking to make sure you are clicking on the little white center of the 3d widget when pressing in the middle mouse?
Middle Mouse Pivot Move
Notice the tiny closed fist when successfully grabbing and moving the pivot location for your mesh. Let me know if you are still unable to manually relocate the working pivot.
