How do you render a video in Sequencer beta from the perspective of the cameras you've animated?
No matter what I do, the sequence always renders from the perspective of the "The Player Start", even if I have enabled cinematic mode or have deleted the player start entirely.
Building on that question, how would I go about cutting from one camera to the next for a multi-cam shoot? In Matinee, it was a very simple matter of adding cuts to the Director Track but no such feature exists in Sequencer to my knowledge.

Make sure you are adding the right tracks to your sequencer sequence, you'll need a shot track. You'll also need to add the cameras you want to the sequence. :D
