Sectioning a model/level

Has anyone managed to dynamically section a model/level with a plane at all? I’m thinking of something like a clipping plane however applied in a controlled manner to a few objects. eg to live section a car or building in half to see inside etc. It would be great to be able to control this with something like a VR controller or a handle in space that could move this along (a bit like sectioning a 3D PDF).
