question about assets
If I loading models that do not use in the levels (or materials, plugin etc), unreal fill me the executable including models that do not use?

No, the assets that are not used are not in maps that you package should not be included in your package. If an asset is still present in your package, you can use the Reference Viewer to watch where this specific asset is used. If your asset is still present, check "Project Settings > Full Rebuild".
