but I wander if i can use pictures from official documentation (Unreal Engine 5 Documentation | Unreal Engine 5.0 Documentation) for better explain the topics.

It say that I can use their resources, but not sure if i can sell it if i include a figure they created in my textbook.
I suggest you to read the terms of service or wait for an official answer from a staff member, I don’t recommend trusting the answer of an outsider when it comes to the legal terms. Only trust yourself and the staff to avoid conflicts.
You are permitted to use images of UE4 itself from Epic’s documentation for your own for-profit documentation.
