Is possible to change launcher download directory? All content examples are downloaded to “Documents” folder

If I understand you correctly you are talking about the vault contents. If so you can specify the vault directory by going to the settings cog in the top right hand corner, then clicking “edit vault cache location”.
Note this will not move any existing content, so if you’re looking to free up data consider moving the files to the new location yourself. It is advisable to restart the launcher following the change too.
